Mini Chicken Parmigiana



4 Chicken breasts (halved crossways)
2 tbs Tomato paste
1 tbs Basil - Gourmet gardens
Salt and pepper
1/2 tin of diced tomatoes
1/3 cup bread crumbs
Grated cheese

Preheat oven to 200 and grease an oven proof dish with a light spray of oil.

Place cut chicken breast into oven dish.

Combine tomato paste and basil together and baste onto chicken breasts.
Top with diced tomatoes, cheese and bread crumbs.

Season with salt and pepper



Cook for 30-45 minutes or until chicken cooked and top golden brown.



Serve with pasta or mashed potato with steamed vegetables.
