One-pan moroccan chicken couscous

My favourite dishes of all time are the one-pan recipes that take hardly any time to prepare and create very little mess.

Imagine my excitement when flicking through the Woman's Day to discover this one-pan chicken couscous creation.  It soon went on the meal plan, even though hubby isn't a great fan of couscous. I had to try it!

It was delicious and to my surprise even hubby went back for seconds.  Master 5 was not so keen but 3 out of 4 in the BZ house would definitely try again.


2tbs olive oil
500g chicken breast sliced
1 onion thinly sliced
1 red capsicum sliced and seeded
1/4 cup moroccan paste
400g tin chickpeas drained and rinsed
1/3 cup dried apricots
1 cup instant couscous
2cups chicken stock
coriander leaves to serve

Heat oil, brown chicken and remove from pan.

Saute onion and capsicum until onion is soft then add paste and cook for 1 min.

Return chicken to pan and add chickpeas and apricots.  Stir through couscous and pour in stock.  Season to taste.

Reduce to low heat and cook covered for 3-4 mins.

Remove from heat and cover for 5mins.  Fluff with fork and serve topped with the coriander.
