Tomato, chorizo and feta pasta with balsamic dressing

Pack of spiral pasta  (I prefer spiral but you could use penne or whatever you have on hand)
Olive oil
Chorizo or Bacon if preferred -   (Omit meat if you prefer a vegetarian option)
Cherry tomatoes halved (Toss in pan for that extra flavour)
Snow peas thinly sliced
Celery sliced
Mushrooms sliced
Feta cheese  (I prefer South cape marinated Feta)
1/4 cup Balsamic vinegar
1/2 cup passatta (tomato puree)
Handful rocket and baby spinach
Cracked pepper

Slice chorizo and cook in oil, add celery, snow peas and mushrooms. Stir through balsamic and passatta. Cook your pasta and then drain and toss through sauce.  Top with feta cheese, rocket, baby spinach, tomatoes and cracked pepper. Serve with garlic bread if desired.
