4 Ingredient Mango chicken curry

This easy peasy mango chicken curry is a hit at our house from Mr 3 to Mr 40+
I even got told that it was "gorjus!" from Mr 3.  hehe

Ingredients -

500 grams chicken thighs cut into cubes
2 teaspoons Keens curry powder (or to taste)
1 can (425g) mangoes
1/2 can coconut cream

Optional -
1 Brown onion cut into slices
Vegetables, such as pumpkin and zucchini cut into cubes


Cook the chicken
Add 2 teaspoons of Keens curry powder (or to taste), cook for another 5 mins.
Add half a can of coconut cream, cook for a final 10 mins
Add vegetables* if desired and stir through a 425g can of mangoes.

*Softer vegetables like zucchini or peas can be added in the final 5 mins

Serve with rice or mashed potato
