500g beef mince
San Remo basil and red wine pasta sauce (I was lazy! You can make your own sauce)
Penne pasta cooked to taste
Cracked black pepper
Preheat oven to 180
Brown mince, garlic and chorizo. Add eggplant, mushroom, zuccini and pasta sauce and simmer until cooked. Crack pepper to taste.
Cook pasta until al dente and add to sauce mix.
Grease oven dish, place pasta and sauce mix, topped with bocconcini and sliced cherry tomatoes, then cook until cheese melted and lightly browned.
Serve with green salad and garlic bread. With a glass of red wine for mumma!
