I LOVE a big pot of soup on a chilly day. Nothing soothes the soul more. Thankfully my boys seem to have the same taste for soup as mummy, which helps a great deal at dinner time.
Apart from our Family fave (Homemade Chicken Noodle) another favourite is Lamb Minestrone. Mmm...Mmmmm
I base my recipe off one I found in The Surpise Chef's Cookbook....
2 - 3 Lamb Shanks
2 1/2 litres of water (I use veg or chicken stock)
Potato (I added sweet potato)
Spaghetti (I use angel hair pasta)
Canned tomatoes x 2
Serve topped with parmesan if desired
Cook Lamb shanks for 2-3hrs in stock with onion, carrot, potato and celery. Season with salt and cracked pepper. Remove from stock once meat tender.
Strain into a bowl reserving the liquid and set aside with vegetables.
Remove meat from bone and add to the stock with vegetables. Add pasta and remaining vegies and simmer until tender. Serve with crusty bread and a sprinkle of parmesan if desired.
